Healthy Eggplant Lasagna

What do you need:

  • 1 large eggplant, peeled, cut into 1/4-inch pieces, roasted

  • 1 egg

  • 3 sprigs of thyme, chopped

  • 2 sprigs oregano, chopped

  • 2 garlic cloves, minced

  • 6 slices part-skim mozzarella cheese

  • 2 1/2 cups tomato sauce

  • 2 cups shredded Italian cheese mix

  • 2 cups ricotta cheese

  • 1 1/4 cups of chopped spinach

  • 10 ground black pepper

  • Salt to taste

In a bowl, combine the egg, thyme, oregano, garlic, Italian cheese mixture, ricotta cheese, and black pepper. Place aluminum foil on a 9-inch baking sheet and then spread about 1/2 cup of the tomato sauce followed by half of the roasted eggplant. Layer with half the spinach then half the ricotta mixture. Repeat the layers with the ingredients, finishing with the tomato sauce. Top lasagna with mozzarella before topping with foil. Bake in a preheated oven (350 degrees F) for 30 minutes. Remove foil and continue to bake for 5-10 minutes or until cheese is golden brown and bubbly.

What do you need:

  • 1 head of cauliflower, cut into small pieces, steamed

  • 1 sweet onion, thinly sliced

  • 1 cup of milk

  • 1 cup Monterey Jack cheese

  • 1 cup mozzarella cheese

  • 3/4 cup of Gouda cheese

  • 1/2 cup of breadcrumbs

  • 1/4 teaspoon cayenne pepper

  • Salt and ground black pepper to taste

We have a greased baking pan, layers of cauliflower, onion, Monterey Jack cheese, mozzarella cheese, and Gouda cheese. Season with cayenne pepper, salt, and ground black pepper. Pour the milk over the mixture and then cover with aluminum foil. Bake in a preheated oven (375 degrees F) for 40 to 45 minutes. What do you need:

  • 1 kilogram sweet potatoes, peeled and cut into long, thin strips that resemble noodles

  • 3 strips of bacon cut in the center, chopped

  • 3 beaten eggs

  • 2 garlic cloves, minced

  • 1 cup of grated Parmesan cheese

  • 1 cup of sliced ​​mushrooms

  • 3/4 cup baby spinach

  • 1 tablespoon of extra virgin olive oil

  • 1/4 teaspoon of salt

  • 1/4 teaspoon ground black pepper

Place the sweet potatoes in a pot of boiling water and stir until slightly softened, about 1 minute. Remove from heat. Reserve 1/4 cup of water and drain the rest. Return the “noodles” to the pot. In a bowl, combine the reserved water, eggs, Parmesan cheese, salt, and pepper then add the sweet potatoes to the pot. Toss to coat. In a skillet, heat the oil and then cook the bacon and mushrooms until cooked through, add the garlic and spinach. Pour the mixture into the pot and toss to combine with the sweet potato.
